“La Bouitte” restaurant and Yannick Alleno awarded 3 Michelin stars

The “La Bouitte” restaurant run by Rene Meilleur and his son Maxime in the French Alps, as well as the famous chef Yannick Alleno, were awarded 3 Michelin stars by the prestigious Michelin Guide in its 2015 edition published on Monday. Rene and Maxime are self-taught and create dishes inspired by local products, “generous, authentic, full of emotion”, and “exceptional products” in their restaurant at 2,500 metres altitude, points out the Michelin Guide. “Their skill creating dishes with local fish is astounding,” praised Michael Ellis, international director of the Michelin Guide.

The other star of this new edition is 46-year-old Yannick Alleno from Paris, who took over the Pavillon Ledoyen restaurant on the Champs-Elysees in July.

Awarded the “chef of the year” distinction by the Gault et Millau guide in October, Yannick Alleno was rewarded for his work on sauces, which he creates through a process of “extraction” in order to turn produce into a very pure juice with an intense flavour.

The 2015 selection of the red guide (Michelin Guide) was announced in particularly formal surroundings, as it took place rather unusually at the French Foreign Office (Quai d’Orsay). The aim was to promote the prestige of French gastronomy which is on the Unesco World Heritage list.
