Walloon and Brussels hotelier schools can soon compete against each other in a competition designed to promote the use of beer in dishes as well as on restaurant tables. The organizers of the competition want hotelier schools to start teaching beer culture, as they tend to favour wine culture, even though Belgian breweries are becoming more and more successful worldwide.
Born from the initiative of two professors from the Notre-Dame de Fleurus Institute, “Beer Chefs” is organized by several partners from the brewery industry and four Belgian breweries. All French-speaking hotelier schools have been contacted and can register up until the 14th of November (www.beerchefs.be).
On the basis of recipes proposed in their applications, six schools will be selected to take part in the final on the 25th of February 2015 at the Notre-Dame Institute, which will not take part so as to remain neutral.
Each team will be made up of two students, one in the kitchen, one serving. They should come up with and present a beer cocktail and four dishes made using beer from the partner breweries. The jury will look at hygiene, use of the local products, as well as attempts to avoid wastage, said the organizers on Tuesday while presenting their initiative at Fleurus.
The winning team will get the chance to work in a Michelin starred restaurant for a week preparing dishes using beer, and the next competition will be organized in the winning school.
According to Didier Colart, one of the organizers, the competition will eventually be open to all hotelier schools in the country.
