Mabelle, a new pop-up space in Brussels, opened on September 1st and it is bringing a new concept in dining to the Belgian capital.

Mabelle, which is housed in the former AB Café, right next to the emblematic cultural centre of Ancienne Belgique, is a hyper-local, avant-garde restaurant which brings together the chefs of several notable eateries from the capital to challenge each other and provide taste experiences to the paying customers.

A la carte, there are exclusive dishes concocted by the most exciting restaurants in Brussels. Carefully created by each chef, they are above all sustainable, local and vegetarian.

"The aim was to bring together several Brussels restaurants under one roof, and to challenge each chef to create a sustainable dish that would be exclusively served at Mabelle," explains Sanad, one of Mabelle's managers.

Cuban sandwiches or vegetarian spaghetti

The result is a selection of dishes to suit everyone. On the menu, you can find a burger from Kitsune, a "Cuban sandwich" from Frank, a shakshuka from Chickpeas, tacos from Wacko Taco, vegetarian spaghetti from Monk and a curry from Mission Masala. It is a menu that is 100% Brussels cuisine, created from locally sourced producers and transported in sustainable ways.

Sustainability also extends to the interior. "The counter, for example, is covered with clay that has been recovered from different construction sites in Brussels," Sanad explains. The rest of the decoration revolves around nature with green plants in all directions, and a chic minimalism that gives pride of place to natural colours such as white, beige or brown.

The atmosphere, just like the menu, is designed to attract everyone and exclude no-one. "Although the address is in the former AB café, we want to address everyone,” says Sanad. “You can come for an aperitif before a concert as well as book a table like in a classic restaurant,"

Mabelle, located at Steenstraat 11 in central Brussels, is open every day, from 11:30 to 14:30 and from 17:30 to 21:30 on weekdays and from 17:30 to 21:30 on weekends. You can also come for a drink until the small hours as Mabelle is theoretically open until 1am but will stay open as long as there are people.
